Ingredients:

  • Chicken: 37.5 kg, cut into 12 or 16 pieces per bird
  • Cooking Oil or Ghee: 6-7 liters
  • Onions: 7.5 kg, finely sliced
  • Ginger-Garlic Paste: 1.25 kg
  • Tomatoes: 20 kg, finely chopped
  • Yogurt: 5 kg, whisked
  • Green Chillies: 400-500 grams, slit lengthwise
  • Red Chili Powder: 250-300 grams (adjust to taste)
  • Salt: As per taste (around 200-300 grams initially, adjust later)
  • Turmeric Powder: 100 grams
  • Coriander Powder: 250 grams
  • Cumin Seeds: 100 grams
  • Garam Masala Powder: 100 grams
  • Fresh Ginger: 500g, julienned for garnishing
  • Fresh Coriander: 1 kg, chopped for garnishing
  • Lemons: 50, cut into wedges for serving
Method:
  • In your large pots or cauldrons, heat the oil or ghee on medium heat. Once hot, add the cumin seeds and let them splutter for a few seconds.
  • Add the sliced onions and fry them until they become translucent.
  • Add the ginger-garlic paste and sauté until the raw smell disappears.
  • Add the chicken pieces to the pot. Fry them until they are browned on all sides.
  • Once the chicken is browned, add the chopped tomatoes, yogurt, green chillies, red chili powder, salt, turmeric, and coriander powder. Mix everything well.
  • Cover the pot and allow the chicken to simmer on medium to low heat. Make sure to stir occasionally to prevent the bottom from burning.
  • Once the chicken is almost cooked through and the gravy starts to thicken, check the seasoning. Adjust salt, chili, or other spices as needed.
  • When the chicken is fully cooked and the gravy has reached your desired consistency, sprinkle garam masala over the karahi. Stir well.
  • Garnish with fresh coriander leaves and julienned ginger.
  • Serve the Special Chicken Karahi hot with naan, roti, or rice, accompanied by lemon wedges.
