Ingredients:

  • Cooked jasmine rice or long-grain rice: 3 cups (preferably from the day before, cold and grains separated)
  • Chicken breast: 1 large, thinly sliced or diced into bite-sized pieces
  • Eggs: 3, lightly beaten
  • Green onions (spring onions): 4, finely sliced (separate white and green parts)
  • Frozen peas and carrots mix: 1 cup (thawed)
  • Soy sauce: 3 tablespoons
  • Sesame oil: 1 teaspoon (optional for flavor)
  • Vegetable oil: 4 tablespoons
  • Salt and white pepper: to taste
  • Garlic: 2 cloves, minced
  • Ginger: 1-inch piece, minced or grated
  • Oyster sauce (optional): 1 tablespoon for a deeper flavor

Instructions:

  1. Chicken Prep: Season the chicken pieces with a pinch of salt and white pepper. In a wok or large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the chicken and stir-fry until cooked through. Remove the chicken and set aside.
  2. Scrambling the Eggs: In the same wok, add another tablespoon of oil. Pour in the beaten eggs and scramble until fully cooked but still moist. Remove the eggs and set aside.
  3. Vegetables: Add another tablespoon of oil to the wok. Stir in the minced garlic, ginger, and the white parts of the green onions. Sauté until aromatic. Add the thawed peas and carrots mix and stir-fry for a couple of minutes until tender.
  4. Frying the Rice: Push the veggies to the side and add the final tablespoon of oil in the center. Add the rice, ensuring it's well spread out. Let it fry for a minute before mixing with the veggies.
  5. Combine and Season: Add the cooked chicken and scrambled eggs back to the wok. Pour the soy sauce and optional oyster sauce over the rice mixture, ensuring an even coating. Mix everything thoroughly, breaking up the eggs into smaller pieces. Season with a little more salt and white pepper, if needed. If using sesame oil, drizzle it over the top now.
  6. Garnish and Serve: Stir in the green parts of the sliced green onions. Serve your Chicken Egg Fried Rice hot.

Tips:

  • Using cold rice ensures the grains remain separate and don't turn mushy when stir-frying.
  • You can also add a dash of chili oil or some crushed red pepper flakes if you like it spicy.
  • Feel free to adjust the soy sauce or add other sauces to your preference. Just remember to balance the flavors.
