Ingredients:

  • Mutton (goat meat) - 15 kg, cut into pieces

  • Garlic paste - 500 grams
  • Red chili powder - 150 grams (adjust to taste)

  • Coriander powder - 150 grams
  • Cumin powder - 50 grams
  • Garam masala powder - 50 grams
  • Whole garam masala (cloves, cinnamon sticks, cardamom pods) - 25 each
  • Fresh green chilies - 100 grams, slit
  • Fresh mint leaves - 500 grams, chopped
  • Fresh coriander leaves - 500 grams, chopped
  • Cooking oil or ghee - 2 liters
  • Salt - as needed
  • Water - as needed
  • Lemon juice - from 10 lemons

Method:

  1. Preparing the Meat: In a large pot, heat oil or ghee. Add the whole garam masala (cloves, cinnamon, cardamom) and sauté for a minute until fragrant. Add the sliced onions and fry them until they're golden brown. Add the ginger and garlic paste and sauté for a few minutes.
  2. Cooking the Mutton: Add the mutton pieces to the pot and cook until they are browned on all sides. Add red chili powder, turmeric powder, coriander powder, cumin powder, and salt. Mix well and cook for a few minutes. Add chopped tomatoes and cook until they soften and the oil starts to separate.
  3. Adding Yogurt: Reduce the heat to medium and add beaten yogurt. Mix well and let it cook for about 10-15 minutes, stirring occasionally, until the oil starts to float on the top.
  4. Adding Water and Cooking: Add enough water to cover the mutton pieces. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let the mutton cook until it's tender. This might take around 1.5 to 2 hours, depending on the size of the mutton pieces.
  5. Finalizing the Dish: Once the mutton is tender and the gravy has thickened, add garam masala powder, slit green chilies, and chopped mint and coriander leaves. Mix well and let it simmer for another 10-15 minutes to let the flavors meld together. Adjust salt and spices if needed.
  6. Finishing Touch: Before serving, drizzle lemon juice over the dish to enhance the flavors and give it a tangy kick.
  7. Serving: Serve the Hyderabadi Mutton Gosht with steamed rice, naan, or roti.
