Lahori Hareesa Recipe

Here's a Lahori Hareesa Recipe 

Ingredients:

  • 500g beef or mutton (cut into small pieces)
  • 1 cup broken wheat (soaked overnight)
  • 1/2 cup split gram lentils (chana dal, soaked overnight)
  • 2 onions (finely chopped)
  • 2 tbsp ginger garlic paste
  • Salt to taste
  • 1 tbsp red chili powder
  • 1/2 tbsp turmeric powder
  • 1 tbsp coriander powder
  • 1 tsp garam masala powder
  • 4-5 green chilies (finely chopped)
  • 1/2 cup ghee or oil
  • New coriander leaves and ginger cuts for decorate

For Hareesa Masala:

  • 2 tbsp cumin seeds
  • 2 tbsp coriander seeds
  • 1 tsp black peppercorns
  • 2 cinnamon sticks
  • 3-4 black cardamom pods
  • 6-8 cloves

Instructions:

  1. Dry roast cumin seeds, coriander seeds, black peppercorns, cinnamon sticks, black cardamom pods, and cloves in a pan until fragrant. Allow them to cool and crush into a fine powder. This is the Hareesa masala.
  2. In a large pot, heat the ghee or oil over medium heat. Add the finely cleaved onions and sauté until brilliant brown.
  3. Add the ginger-garlic paste to the pot and fry for a few minutes until the raw smell disappears.
  4. Add the meat to the pot and cook until it changes tone. Add salt, red chili powder, turmeric powder, coriander powder, and half of the prepared Hareesa masala. Blend well to cover the meat with the flavors..
  5. Add the soaked broken wheat and split gram lentils to the pot. Pour sufficient water to cover the blend.
  6. Cover the pot and let it simmer on low heat for about 6-7 hours. Stir occasionally and add more water if needed to prevent sticking to the bottom.
  7. Once the meat and grains are fully cooked and soft, use a hand blender or a traditional wooden masher (ghotna) to blend the mixture into a smooth and creamy consistency.
  8. Add the remaining Hareesa masala, garam masala, and finely chopped green chilies. Stir well and cook for another 10-15 minutes.
  9. The Hareesa should now be thick and creamy. If it's too thick, add a little water and cook for a few more minutes.
  10. Decorate with new coriander leaves and ginger cuts prior to serving..
