Ingredients:

  • Mutton or Lamb (preferably with fat): 500 grams, bone-in pieces
  • Garlic paste: 1 tablespoon
  • Ginger paste: 1 tablespoon
  • Salt: to taste
  • Black pepper: 1 teaspoon (or as per taste)
  • Cumin seeds: 1 teaspoon
  • Green chilies: 4-5, slit
  • Fresh coriander leaves: for garnishing
  • Lemon juice: 1-2 tablespoons
  • Water: 1/2 cup (or as needed)
  • Oil or ghee (optional): 2-3 tablespoons (only if the meat is lean)

Instructions:

  1. Initial Cooking: In a large pot or pressure cooker, add the mutton pieces, ginger-garlic paste, salt, and water. If you're using a pot, let the meat cook on low heat until it's tender and the water has evaporated. If using a pressure cooker, cook for about 15-20 minutes after the first whistle or until the meat is tender.
  2. Roasting the Meat: Once the meat is tender and the water has mostly evaporated, you'll see the meat releasing its own fat. If your meat is lean and doesn't release much fat, you can add some oil or ghee at this point. Roast the meat in this fat/oil on medium heat until it's nicely browned.
  3. Seasoning: Add freshly ground black pepper, cumin seeds, and green chilies to the pot. Give it a good mix.
  4. Final Touch: Squeeze in the lemon juice and mix. Let the meat roast for another few minutes until it's aromatic and fully infused with the flavors.
  5. Garnish with fresh coriander leaves.

Serve Namkeen Gosht with naan or any other flatbread. It's a dish that emphasizes the natural flavors of the meat, enhanced with just a few spices. Enjoy!
