Chicken Fried Rice Recipe

"Makki Madni Catering" is Providing  a classic "Chicken Fried Rice" recipe that's simple and delicious:

Ingredients:

  • Cooked rice: 3 cups (preferably leftover rice as it's drier)
  • Boneless chicken: 200 grams, cut into small bite-sized pieces
  • Eggs: 2, whisked
  • Soy sauce: 2-3 tablespoons
  • Sesame oil: 1 teaspoon (optional for flavor)
  • Vegetable oil or canola oil: 2-3 tablespoons
  • Onion: 1 small, finely chopped
  • Garlic: 2-3 cloves, minced
  • Mixed vegetables (peas, carrots, corn, and green beans): 1 cup, chopped
  • Green onions (spring onions): 2-3, chopped
  • Salt and pepper: To taste
  • Optional: Red pepper flakes or chili oil for some heat

Instructions:

  1. Preparation: Make sure your cooked rice has completely cooled down. If you can, leaving it in the fridge overnight is best. This ensures that the rice doesn't become mushy when stir-frying.
  2. Cook Chicken: In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the chicken pieces, season with a little salt and pepper, and cook until they are no longer pink. Transfer to a plate and set aside.
  3. Scrambled Eggs: In the same skillet, add a bit more oil if needed. Pour in the whisked eggs. Let them sit for a few seconds and then scramble them until fully cooked. Transfer to a plate and set aside.
  4. Vegetables & Aromatics: Add another tablespoon of oil to the skillet. Add the chopped onions and minced garlic, stir-frying until they become translucent. Then, add the mixed vegetables and cook until they're tender.
  5. Combine Everything: Push the veggies to one side of the skillet. Add the last tablespoon of oil to the empty side and add the rice. Fry for a couple of minutes to slightly crisp up the rice. Now, combine everything: mix the veggies, rice, cooked chicken, and scrambled eggs. Stir well to combine.
  6. Seasoning: Drizzle soy sauce and optional sesame oil over the rice. Mix everything together. Add salt, pepper, and red pepper flakes or chili oil (if using) to taste.
  7. Final Touch: Add the chopped green onions and give everything a good mix for another minute.
  8. Serve the Chicken Fried Rice hot!
