"Makki Madni Catering" is Providing "Sheer Khurma" Recipe It is also known as "Sheer Korma" is a traditional festive breakfast dessert made during Eid ul-Fitr in countries like India, Pakistan, and Bangladesh. It's a rich vermicelli pudding made with milk, dates, and nuts. Here's a basic recipe for Homemade Sheer Khurma:

Ingredients:

  • Vermicelli: 100 grams (preferably the thin ones made especially for Sheer Khurma)
  • Full-fat milk: 1 liter
  • Ghee or unsalted butter: 2-3 tablespoons
  • Sugar: 100 grams or as per taste
  • Dates: 10-12, deseeded and chopped
  • Mixed nuts (like almonds, pistachios, and cashews): 100 grams, coarsely chopped
  • Golden raisins: 30 grams
  • Green cardamom: 5-6, crushed or cardamom powder: 1/2 teaspoon
  • Saffron strands: A pinch (optional)
  • Rose water: 1 teaspoon (optional)

Instructions:

  1. Preparation: Soak the dates in warm milk for about 30 minutes to soften them. Soak the nuts in water for a few hours, then peel and slice them. If using saffron, soak the saffron strands in 1-2 tablespoons of warm milk.
  2. Fry Vermicelli & Nuts: In a deep-bottomed pan, melt the ghee or butter. Once it's hot, add the vermicelli and fry until they turn golden brown. Remove and set aside. In the same ghee, fry the mixed nuts and raisins till they are golden. Remove and set aside.
  3. Cooking Milk: In the same pan, pour the milk and let it come to a boil. Once boiling, reduce the heat and let it simmer until it thickens a bit.
  4. Add Sugar & Spices: Add sugar and crushed cardamom (or cardamom powder) to the milk and stir until the sugar dissolves.
  5. Add Vermicelli: Add the fried vermicelli to the milk and cook on a low flame until the vermicelli is cooked and the milk thickens to your desired consistency.
  6. Add Dates & Nuts: Stir in the soaked dates, fried nuts, and raisins. Mix well.
  7. Final Touch: If you're using saffron, add the saffron-infused milk at this point for a rich flavor and color. Also, add rose water if you're using it.
  8. Simmer for another 2-3 minutes, then turn off the heat.
  9. Serve the Sheer Khurma hot or chilled, garnished with some more nuts if you prefer.

Note: Adjust the sugar as per your preference. Some people also add condensed milk or evaporated milk for extra richness.

Remember, when Makki Madni Catering is cooking for such a large group, the key is to have a good mise en place (everything in its place). Prepare and measure everything beforehand, and it'll be easier to manage the actual cooking process. Also, consider recruiting a couple of helpers to expedite tasks like chopping, stirring, and serving!
