Makki Madni Catering Is Providing "Cheesy Chicken Donuts" that are delightful snack, combining the taste of chicken with the richness of cheese, all in the form of a donut. Here's a scaled-up version to serve 50 people:

Ingredients:

  • Boneless Chicken: 7.5 kg, boiled and shredded.
  • Grated Cheese (like mozzarella or cheddar): 2.5 kg
  • Breadcrumbs: 2 kg (plus extra for coating)
  • Fresh Coriander: 500 grams, finely chopped.
  • Green Chillies: 250 grams, finely chopped.
  • Onions: 2.5 kg, finely chopped
  • Black Pepper Powder: 50 grams
  • Salt: As per taste (start with 100 grams and adjust)
  • Eggs: 50 (beaten; keep some for the mixture and some for coating)
  • Milk: 1 litre
  • Red Chili Flakes: 100 grams (optional)
  • Garlic Paste: 150 grams.
  • Cooking Oil: As needed for frying.
  • Flour (all-purpose): 1 kg (for binding and dusting)

Method:

  • In a large mixing bowl, combine the boiled and shredded chicken, grated cheese, breadcrumbs, chopped coriander, chopped green chillies, chopped onions, black pepper, salt, red chili flakes (if using), and garlic paste. Mix until well combined.
  • Add a portion of the beaten eggs (around 10-15 eggs) and milk to the mixture to make it moist and easy to shape. If the mixture is too wet, you can add a bit of flour to help bind it.
  • Take portions of the mixture and shape them into balls, then press in the centre and shape them to resemble a donut.
  • Once all the donuts are shaped, set up a coating station. First, dust the donuts lightly with flour. Dip them in the remaining beaten eggs and then coat them with breadcrumbs.
  • Heat the cooking oil in a large frying pan or cauldron. Once the oil is hot enough (you can test by dropping a small piece of the mixture into the oil; it should sizzle and rise to the surface), fry the donuts in batches. Ensure not to overcrowd the pan.
  • Fry the donuts until they are golden brown on all sides. This should take about 4-5 minutes per batch.
  • Once fried, remove them from the oil and drain on paper towels to remove any excess oil.
  • Serve the Cheesy Chicken Donuts hot with ketchup or your favorite dipping sauce.

Note: Ensure the chicken mixture is adequately seasoned by tasting it before shaping into donuts. Adjust seasonings as needed. Also, ensure the oil remains at a consistent temperature throughout the frying process for even cooking.
