Ingredients:

  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon crushed red pepper flakes
  • 2 tablespoons cornstarch
  • 2 eggs, beaten
  • 1/4 cup sliced green onions
  • Salt, to taste
  • Optional: 1/2 cup cooked chicken or pork, shredded

Instructions:

  1.  In a large pot, bring the chicken or vegetable broth to a boil over medium-high heat.
  2.  Add the sliced shiitake mushrooms and bamboo shoots to the pot. Reduce the heat to medium and let the soup simmer for about 5 minutes.
  3. Stir in the diced tofu and continue to simmer for another 5 minutes.
  4. In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, white pepper, and crushed red pepper flakes.
  5. Pour the mixture into the pot and stir well to combine. Let the soup simmer for another 5 minutes.
  6. In a separate small bowl, mix the cornstarch with 1/4 cup of water to create a slurry. Slowly pour the slurry into the soup, stirring constantly, until the soup thickens slightly.
  7. Slowly pour the beaten eggs into the soup in a steady stream, stirring gently with a fork to create ribbons of egg.
  8. 8. Add the sliced green onions to the pot and stir to combine. If you’re using cooked chicken or pork, add it to the pot at this time.
  9. Taste the soup and adjust the seasoning as needed, adding salt if desired.
  10. Once the soup is heated through and the flavors have melded together, it’s ready to serve.
  11. Ladle the hot and sour soup into bowls and garnish with extra sliced green onions, if desired.

Tips:

  • You can customize this soup by adding other ingredients like baby corn, water chestnuts, or even shrimp or scallops for a seafood version.
  • If you prefer a thicker soup, you can add more cornstarch slurry to achieve the desired consistency.
