Makki Madni Catering is Providing "Creamy Achari Handi" is a delightful dish that combines the flavors of traditional pickling spices (achar) with creamy textures to provide a unique and flavorful experience. Here's a scaled-up version of Creamy & Smooth Chicken Achari Handi for 50 people:


Ingredients:

  • Chicken: 37.5 kg, boneless and cut into cubes
  • Yogurt: 5 kg, whisked
  • Fresh Cream: 5 liters
  • Tomatoes: 20 kg, finely chopped or pureed
  • Onions: 10 kg, finely sliced
  • Ginger-Garlic Paste: 1.25 kg
  • Mustard Seeds (Rai): 50 grams
  • Fenugreek Seeds (Methi Dana): 50 grams
  • Fennel Seeds (Saunf): 50 grams
  • Nigella Seeds (Kalonji): 50 grams
  • Cumin Seeds (Zeera): 100 grams
  • Red Chili Powder: 300 grams (adjust to taste)
  • Turmeric Powder: 100 grams
  • Salt: As per taste (start with 250 grams and adjust as needed)
  • Cooking Oil or Ghee: 2.5-3 liters
  • Fresh Green Chillies: 500 grams, slit lengthwise
  • Fresh Ginger: 500 grams, julienned for garnishing
  • Fresh Coriander: 1 kg, chopped for garnishing
Method:

  • In a large pot or cauldron, heat the oil or ghee. Add the finely sliced onions and sauté until they are golden brown.
  • Add the ginger-garlic paste and sauté for a couple of minutes until the raw smell disappears.
  • Add the chicken cubes and fry until they are lightly browned on all sides.
  • Incorporate the tomato puree or chopped tomatoes and cook until the oil begins to separate from the masala.
  • Add red chili powder, turmeric powder, and salt. Mix well.
  • In a separate pan, dry roast the mustard seeds, fenugreek seeds, fennel seeds, nigella seeds, and cumin seeds for a couple of minutes until they release their aromas. Once cooled, coarsely grind them in a mortar and pestle or a grinder. Add this roasted and ground masala mix to the chicken.
  • Stir in the whisked yogurt and fresh cream, mixing continuously to prevent curdling. Let the curry simmer on low heat until the chicken is tender and fully cooked. You can add a little water if you find the gravy too thick.
  • Once the chicken is cooked, and the gravy is creamy, add the slit green chillies. Stir well and remove from heat.
  • Garnish with julienned ginger and freshly chopped coriander.
  • Serve the Creamy & Smooth Chicken Achari Handi with naan, roti, or steamed rice.
