Chapli Kabab Recipe

Sure, here is a basic recipe for Chapli Kabab. This traditional Pakistani dish is made primarily with ground meat, various spices, and herbs.

Ingredients:

  • 1kg Ground Beef or Mutton
  • 1/2 cup finely chopped Onion
  • 1/2 cup finely chopped Tomatoes (seeds and pulp removed)
  • 3 Green Chilies (finely chopped)
  • 1/2 cup chopped Fresh Coriander
  • 1/2 cup Fresh Mint (chopped)
  • 3 tbsp Crushed Pomegranate Seeds
  • 1 tsp Crushed Red Chilli Flakes
  • 1 tsp Cumin Seeds
  • 1 tsp Coriander Seeds
  • 1 tsp Garam Masala
  • 2 tsp Ginger-Garlic Paste
  • Salt to taste
  • 2 Eggs
  • 1/2 cup Wheat Flour or Gram Flour (Besan)
  • Oil for frying

Instructions:

  1. Dry roast the cumin and coriander seeds until aromatic, then grind them into a powder. Set aside.
  2. In a large bowl, combine the ground meat, chopped onion, tomatoes, green chilies, fresh coriander, mint, crushed pomegranate seeds, crushed chilli flakes, the ground cumin and coriander, garam masala, ginger-garlic paste, and salt. Mix well.
  3. Beat the eggs in a different bowl and add them to the meat combination. Mix well again.
  4. Gradually add the wheat flour or gram flour, mixing until it's well incorporated. This will help bind the ingredients together and give the kababs a good texture.
  5. Form the mixture into round, flat patties. They should be about half an inch thick.
  6. Heat the oil in a dish over medium intensity. Once the oil is hot, add the patties and fry them for about 5-7 minutes on each side, or until they're well-browned and cooked through.
  7. Once done, remove the kababs from the oil and drain them on a paper towel.
  8. Serve your Chapli Kababs hot with naan bread, mint chutney, or a side salad.Enjoy!

Remember to adjust the quantities of the spices according to your taste. The mentioned amounts are suggestions and can be modified to suit your preferences.

Also note, traditionally in some regions, the chapli kabab also includes animal fats and various parts of the animal like kidney fat to enhance the flavor. But for health considerations, this recipe doesn't include them. You can add those if you wish and if you have access to them.
