Chicken Malai Tikka and Malai Boti Recipe

Chicken Malai Tikka Recipe:

Ingredients:

  • 500g boneless chicken, cut into bite-sized pieces
  • 1 cup yogurt (hung curd or Greek yogurt works best)
  • 2 tablespoons fresh cream (malai)
  • 2 tablespoons grated cheese (optional)
  • 2 tablespoons ginger-garlic paste
  • 1 tablespoon lemon juice
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground white pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder (adjust to your spice preference)
  • Salt to taste
  • 1 tablespoon oil
  • Skewers for grilling
  • Butter or oil for basting

Instructions:

  1. In a large mixing bowl, combine yogurt, fresh cream, grated cheese (if using), ginger-garlic paste, lemon juice, garam masala, white pepper, cumin, coriander, turmeric powder, red chili powder, salt, and oil. Mix everything well to make a smooth marinade.
  2. Add the boneless chicken pieces to the marinade and coat them thoroughly. Cover the bowl with cling wrap or a lid and let the chicken marinate in the refrigerator for at least 3 to 4 hours, preferably overnight for better flavor absorption.
  3. If you are using wooden skewers, soak them in water for about 30 minutes before grilling. This prevents them from burning.
  4. Preheat your grill or oven to medium-high heat. If using an oven, set it to the "broil" mode.
  5. Thread the marinated chicken pieces onto the skewers.
  6. Place the skewers on the preheated grill or oven rack and cook for about 12-15 minutes, turning occasionally for even cooking. Baste the chicken with butter or oil during the grilling process to keep it moist and add a rich flavor.
  7. Once the chicken malai tikka is cooked and has a slightly charred appearance, remove it from the grill or oven.
  8. Serve hot with green chutney, lemon wedges, and sliced onions. Enjoy your delicious Chicken Malai Tikka!
